Zaatar, Za’atar or Zataar is a dried herb grew naturally in the mountains of Palestine. It is a must have breakfast item, you dip the bread in olive oil and then in the Zaatar mix. You can also make Zaatar paste by adding olive oil to it.
Zaatar paste is commonly used as a spread on bread or for baking Manakish. Manakish is a pizza like meal but with zaatar instead of cheese. Many middle eastern bakeries sell those Manankish pies, a must try bakery item.
The zaatar mix is made by crushing the dried zaatar leaves and add to it toasted sesame, sumac, salt, oregano, olive oil or vegetable oil and some additional herbs. The taste is completely depended on the ratios of these ingredients and the zaatar herb used.

Learn More About Palestinian Za'atar Sampler Combo (jenin, salfit ,Qalqilya) Pack( 500g x 6)
What is Palestinian Zaatar?
Zaatar (Za’atar, Zataar) is a classic Middle Eastern spice mix and a staple in almost every Palestinian home. It’s more than a seasoning – it’s part of the culture and daily breakfast. The base is the zaatar herb itself (a type of wild thyme/oregano), which is dried and crushed, then mixed with:
Crushed dried zaatar leaves
Toasted sesame seeds
Sumac for a citrusy tang
Salt
Oregano and other local herbs
Olive oil or vegetable oil (in some blends)
The taste of each zaatar mix depends completely on the quality of the herb and the balance of these ingredients, which is why regional zaatar from places like Salfit, Qalqilya and Jenin is so sought after.
Traditional Ways to Enjoy Zaatar
The most classic and beloved way to eat Palestinian zaatar is at breakfast:
Pour some extra virgin olive oil onto a small plate.
Add zaatar to another plate.
Dip fresh bread (pita, taboon bread, or any warm bread) into the olive oil.
Then dip it into the zaatar mix and enjoy.
You can also make a zaatar paste by mixing the zaatar blend with olive oil to form a spread. This paste is used for:
Manakish (manakeesh) – a popular bakery item similar to a pizza, but topped with zaatar paste instead of cheese. The dough is spread with zaatar and olive oil and baked until golden.
Sandwiches & wraps – spread the paste on flatbread, add cheese or vegetables and roll it up.
Quick snacks – spread over bread and toast it for a simple, flavorful bite.

Beyond traditional breakfasts, this Palestinian Zaatar Sampler Combo is perfect for adding a Middle Eastern twist to your everyday recipes. Try it:
